-five minute cheese sauce-

Yes, people.

FIVE MINUTE CHEESE SAUCE.

And no Velveeta required (Mel, take note).

I was making pumpkin mac-n-cheese when I realized, hey, I don't need no stinkin' recipe to make cheese sauce! It's this easy:

5 Minute Cheese Sauce

Ingredients:
   equal parts unsalted butter and flour
   cream or milk (of any fat %)
   cheese (shredded is easiest, but you can chop up ANY kind)

1. Create a roux:
     -Melt 1 Tbsp. butter over medium-high heat.
     -Add 1 Tbsp. flour and stir until thick and well-mixed

2. Add milk or cream and stir until the roux is mostly dissolved.
(I don't measure this part---maybe a cup? you can always add more.)


3. Add cheese, and stir until melted.
(Seriously, any cheese you want. Low-fat, high-fat, shredded, cubed, mild, stinky---it ALL works!)



4. Season with a little pepper or get fancy with the spices!


5. Serve immediately, or remove from heat and continue to stir. Broccoli never looked so good.
